BBQ Jackfruit Burger with Cole Slaw (vegan)

Are you vegan? Or would you like to give it a try? In any case, this burger is worth a try. Flavourful BBQ jackfruit and crispy-creamy cole slaw on a fluffy slider bun – you won’t regret one minute it takes making these – promise!

While I like to complicate things and make things from scratch, there is no need to bake your own buns. It will save you a significant amount of prepping and cooking time so feel free to buy the buns with your other ingredients.

Vegan Pulled Jackfruit Burger with Cole Slaw

BBQ Pulled Jackfruit Burger (vegan)

This aromatic BBQ pulled Jackfruit burger comes with crispy-creamy cole slaw on a home-baked bun and fries.

Zutaten
  

Burger Buns (for the very motivated)

  • 200 g wheat flour
  • 170 g spelt flour
  • 1 pck dried yeast
  • 2 tbsp raw sugar
  • 1 tsp salt
  • 120 ml water lukewarm
  • 170 ml plant milk I used oat
  • 2 tbsp canola oil

BBQ Pulled Jackfruit

  • 2 tins Pulled Jackfruit remove seeds, drain and wash
  • 1 yellow onion chopped
  • 2 cloves garlic chopped
  • 1 tsp chili flakes
  • 2 tsp paprika
  • 400 ml dark beer
  • 250 ml veggie stock
  • 250 ml BBQ sauce
  • 1 tsp liquid smoke or use smokey BBQ sauce or smoked paprika instead
  • some oil
  • salt & pepper

Cole Slaw with Horseraddish and Apple

  • 220 g red cabbage shredded
  • 440 g white cabbage shredded
  • 2 carrots shredded
  • 0.5 apple shredded
  • 200 ml vegan mayonnaise
  • 3 tbsp Horseradish & Apple spread (optional) e.g. "Mepfel" by Zwergenwiese
  • 1 tsp mustard
  • 1 tsp white vinegar
  • 0.5 lime juice
  • salt & pepper

Oven-baked Fries

  • 1 kg potatoes
  • 1.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 50 ml olive oil
  • salt & pepper

  • rocket

Bake the buger buns (optional)

  • Mix yeast and raw sugar with luke warm water and let the mixture sit for 5 minutes. In the meanwhile, put oil and plant milk into another bowl and then add the sugar-yeast mixture to it.
    Add flour and salt to a bowl and then add the liquids to it.
    Use the kneading hook of your hand mixer or food processor and knead the dough for 6-7 minutes. Cover the bowl with a kitchen towel and let it rise until it has doubled in volume (about 1 hour).
  • When the dough has risen, move it to a floured surface and knead it briefly with your hands.
    Divide the dough in 12 small or 4 large portions and form the buns. Let them rise for another 35-40 minutes.
    Put them in the middle rack in the preheated oven at 190°C, top and bottom heat.
    Small buns need about 14-15 minutes, large ones 16-18.

Make the BBQ Pulled Jackfruit

  • Fry the chopped onions in a bit of oil, then add the garlic and fry for 1 minute.
    Add jackfruit, spices and liquid smoke as well as the beer and veggie stock. Put the lid on and let it all simmer on low temperature for about 50 minutes. In case there is too much liquid left in the pot, remove the lid for the last 15-20 minutes.
    When the jackfruit is soft and has absorbed most of the liquid, pull the pieces apart using two forks.
  • Now spread the jackfruit on a baking tray with baking paper and pour the BBQ sauce on top. Make sure the jackfruit is thoroughly covered with the sauce.
    Set your oven to grill and let the jackfruit grill away on one of the top racks for about 10-15 minutes. It should still be juicy but have a bit of colour.

Make the Cole Slaw

  • Use a veggie grater or food processor to grate the cabbage, carrots and apple.
    Add the grated veggies and the rest of the ingredients to a bowl and mix well. Add salt & pepper to taste.
    The mixture should sit for about 30 minutes to develop some more flavour.

Make the French Fries

  • Peel the potatoes and cut them into fries or wedges.
    Tip: let the raw fries chill in a bowl of cold water to get a crispier result.
    Put the fries in a bowl and add olive oil, spices, salt, and pepper. Mix well until they are all covered in the oil'n'spice mixture.
  • Put the fries on a baking tray, making sure that there's enough space between them.
    Bake at 230°C for about 45 minutes. Ideally, the Jackfruit will go in the oven with them for the last 10 minutes.

Build the Burger

  • Start by smearing mayonnaise onto the bottom half of the burger bun. Add rocket, pulled BBQ jackfruit, and cole slaw.
